Savory Breakfast Eggs 'N' Oats



If you're following along on Instagram, you may have seen my recent post dedicated to my love of literal and figurative egg yolks!


Th post featured a photo of my favorite yolky breakfast and a couple of you had questions about what was UNDER my yolks. Guys...savory oatmeal is a game changer. I don't even consider this to be a real recipe, but for all of you who asked about it, here it is!


Oh and BY THE WAY- I didn't even realize just how cost effective this meal is until I did the math for this recipe...87 cents per serving, whaaa? Better price than a Bojangles biscuit and better for you too.


Savory Breakfast Eggs 'N' Oats

Makes 1 serving

Cook Time: 10 minutes

Ingredients:

-60g quick oats

-12.5 oz water

-28g Italian 6-cheese blend, shredded

-Garlic Pepper (Get it here!)

-2 Large eggs

Optional: Lots of coffee and an apple :-)



Directions:

1. Add water to oats and microwave to a not-so thick consistency. With my particular microwave and bowl, this takes 4 minutes, but can widely vary with other microwaves.

2. Preheat nonstick pan while oatmeal cooks

3. Sprinkle oats with garlic pepper & cheese, return to microwave, but don't cook further (oats will stay warm and allow cheese to melt).

4. Cook eggs to liking in pan- I do mine over-easy

5. Remove oats from microwave, stir, set eggs on top, and give another sprinkle of garlic pepper.

6. I recommend pairing with copious amounts of coffee and a small apple OTS! Bon appétit! Smakelijk!
