Meal Prep- Fiesta Bowl

I mean really though, who doesn’t love a taco bowl? A little meat, and little rice, some fajita veggies, add spice. I call mine a fiesta bowl because it tastes like a par-tay in my mouth.

Okaay, maybe that's an exaggeration.  

Coming at ya with another super simple meal-prep recipe!

Fiesta Bowl Meal Prep

Makes 4 servings


1lb 96% lean ground beef

1 packet taco seasoning

2 12oz bags frozen HT 3 Pepper and Onion Blend

1 1/4 cup (uncooked) white rice

1 bag of shredded lettuce

8 tablespoons of your favorite salsa

**I LOVE Jack's Special Salsa- try it!

Optional Toppings:

Shredded Cheese

Sour Cream



The beef is hiding underneath the fajita veggies :)

  1. Measure out 1 1/4 cup of rice (uncooked)- should be approximately 225g

  2. Use rice cooker or cook rice on stovetop following the "towel method" https://www.cooksmarts.com/articles/how-to-cook-perfect-rice-on-the-stove/ Set rice aside

  3. Cook ground beef in medium sized pan according to taco seasoning packet instructions (typically you brown beef, drain fat, then add seasoning + water, and simmer for several minutes) Remove beef from pan and set aside.

  4. Using same pan as used for beef, add frozen fajita vegetables and a few tablespoons of water. I find that the little bit of leftover fat from beef helps the vegetables not stick to the pan., plus you get a little taco seasoning flavor in there. Cook vegetables to your preference- I aim for soft, not mushy.

  5. Portion rice, beef, and fajita vegetables into 4 tupperware containers, refrigerate.

  6. I wait until serving to add lettuce, salsa, and optional toppings- helps to avoid the dreaded sog!
